Bacon Wrapped Pork Tenderloin with Garlic and Herbs

  • Paste from one softened head of garlic
  • 1 Tb dijon mustard
  • 1 tsp honey
  • Handful of chopped fresh herbs (thyme, rosemary, parsley, sage)
  • 1 tsp kosher salt
  • 6-8 slices of center cut bacon
  • 1 (1 lb) pork tenderloin (silver skin removed)


Preheat oven to 350 degrees

Cut off the top 1/3 of a head of garlic and place face down in about 1/2 an inch of water in a brownie pan.  Cover with tin foil and bake at 375 for 1 hour.

Let cool and then squeeze the garlic out into a bowl and add herbs, honey, dijon and salt.  Mix to combine.

Spread garlic herb mix on top of pork tenderloin.

Wrap in bacon and secure with toothpicks

Saute bacon wrapped tenderloin on all sides on medium/high heat in a cast iron skillet for a total of 5 minutes until bacon is slightly browned.

Put cast iron skillet right into the oven and roast for 10-15 minutes or until done.  Let pork rest for 10 minutes. The internal temperature should be 145 degrees.

Slice and serve.

*Note: A blush of pink is perfectly fine— it means the pork is done and perfectly delicious!
